Serving left-over foods the next day can become boring, but reinventing new dishes from left-overs is part of the challenge and fun of cooking.  My Mamás understood this and they turned it into an art form.  I learned from them that the best way to make the most of plentiful food is to get creative.  These are some dishes I've prepared using my left-overs as a primary ingredient.  You might be surprised what they were before they found their place back to my table as Encores.

Patatas Revolconas with Scalded Eggs
This an Encore for my Rustic Mashed Potatos.  (Of course, I also include instructions on how to make them from scratch.)  This is a very traditional Spanish recipe, but I've put my own spin on it.  It's quick and easy; and you won't believe the intensity and richness of the flavor.  Featuring the rich colors of the Spanish Flag, this dish will have your friends and family shouting: ¡Olè!

Rustic Mashed Potatos with Caramelized Onions
This is not your everyday bland mash.  Garlic boiled and mashed along with the potatos infuse this side dish with a wonderful aroma.  The caramelized onions make this comforting side dish extra special.


Lazy-Day Whole Wheat Biscuits
Drop biscuits are a quick and easy way to serve some home-baked goodness.  Whole Wheat and Cornmeal make these a nice alternative to ordinary Buttermilk Biscuits.
